Healthy Lime Chicken

Hi everyone! Here you have a super easy, healthy and delicious recipe! I hope you like it!!


  • 1 lb chicken breast
  • 2 minced garlic cloves
  • Zest of one large lime
  • 2 tbsp lime juice
  • 2 tbsp extra virgin olive oil
  • 2 tbsp dijon mustard
  • Salt and black pepper to taste!!

Make the marinade:

In a small bowl we will combine the lime juice with the lime zest, also add in the olive oil, together with the minced garlic and the dijon mustard, season with salt and black pepper to taste, stir again, taste the flavor and add more salt and pepper if needed, then set aside.

Prepare the chicken: 

With a small knife, make three small cuts on each chicken breast,

The cuts are about 2 inches long  and about a quarter of an inch deep, just big enough and deep enough so the marinade can impregnate the meat really well. Place the chicken breast in a large bowl.

Marinate the chicken:

Add four tablespoons of the marinade over the chicken breast, and stir until all the breast are well seasoned with it.  Marinate the chicken for 15 minutes before cooking them

Cook the chicken:

Heat up a griddle on high heat, add a bit of extra virgin olive oil and cook the chicken for about 4 minutes on each side or until brown on all sides.   If you have any leftover marinade add it to the chicken while it’s cooking.

Serve with a salad and you are done!!
