Shrimp Fettucine in Spicy Chipotle Sauce





Here you have a super easy and delicious pasta that’s perfect for any special ocasión or any day of the week.. I hope you like it! 


Ingredients

  • 400 g fettuccine

  • 700 g shrimp

  • 1 cup Parmesan cheese

  • 1 ½  - 2 cups milk 

  • 1 cup sour cream

  • 1 onion

  • 2 bay leaves

  • 3 garlic cloves

  • 3- 4 chipotle peppers in adobo (more to taste)

  • Chopped Cilantro (to taste)

  • 2 tbsp extra virgin olive oil 

  • ½ cube shrimp  bouillon


Peel, devein and rinse the shrimp with cold water. Set them aside until you are ready to use them! 


Cook the pasta according to the instructions on the package. Cook it until Al Dente, then drain and rinse it with cold water. Set it aside.


Make the Chipotle Sauce.

In the blender add in the milk, sour cream and the chipotle peppers. (the chipotle peppers  are to taste, so feel free to add as many peppers in adobo as you like). Season this with ½ a cube of Shrimp bouillon, and blend on high until well blended. Taste the flavor, add more chipotle, salt or pepper if needed.


Season the shrimp with salt and pepper to taste, and also add in two tablespoons of the chipotle sauce, toss until the shrimp is well seasoned and set them aside.


Shred an onion and also shred the garlic cloves.  In a large saucepan heat up two tablespoons of extra virgin olive oil and once the oil is hot, cook the shredded onion and shredded garlic, cook for two minutes, stirring frequently.


After two minutes, then add in the shrimp and continue to cook on high heat for two more minutes. (the shrimp will not cook completely) after two minutes, remove the shrimp from the saucepan.   In the same Saucepan, now add in the chipotle sauce, and also add in one more cup of milk or water, give it a stir and cook on medium heat until it boils.  


After the sauce is boiling, now add in half a cup of Parmesan cheese, stir and continue to cook for 2 more minutes.   Then add in the pasta, give it a stir so the pasta will be well covered with the sauce, then top it with another ¼ cup of Parmesan cheese and also add in the shrimp, stir until everything is well combined, then cover the saucepan with a lid and continue to cook on high heat for 2 more minutes or until the shrimp is well cooked and the pasta is well heated through.   Once it’s done. Then you can serve it.



Top it with more Parmesan Cheese and fresh cilantro.




And serve it with Garlic Bread. Enjoy!
