Double Chocolate Pie




Here you have another great dessert that is perfect for any special occasion.. 


Ingredients:


  • 1 8in prepared graham crust pie pan 

  • 6 oz bitter chocolate

  • ½ cup butter

  • 1 tsp coffee powder

  • 1 cup sugar

  • 4 large eggs

  • ¾ cup unsweetened cocoa powder 

  • ¼ cup water


For Garnish:

  • ½ cup heavy cream

  • ⅔ cup semisweet chocolate chips

  • 1 cup red berries (blueberries, strawberries, raspberries)



Preheat the oven to 350ºF


Prebake the crust at 350ºF for 5 minutes!


We are going to cut the butter in chunks and just set them aside for a minute..


We will also cut the bitter chocolate in chunks and also set them aside for a minute.


Now we are going to melt the butter on a double boiler, and in there with the butter we will also melt the chocolate chunks. This will take about 5 minutes on medium low heat.


Once the butter and the chocolate are melted,  remove them from the stove, and set them aside for a moment.


Add a teaspoon of instant coffee powder into a ¼ cup of hot water, mix it until well combined, and now we are going to pour the coffee mixture over the granulated sugar,  and just stir until the sugar dissolves.  Add in the melted bitter chocolate into the sugar mixture, and then add in the cocoa powder, mix until everything is well incorporated.  Add in the eggs, mix until combined into a very soft and uniform batter. 


Pour the batter into the prepared and prebaked pie pan, and bake it at 350ºF for about 35 - 40 minutes or until the center of the pie is nice and firm.


Let the pie cool down completely before decorating it.


In a saucepan on medium heat heat up half a cup of heavy cream and once it’s hot remove it from the stove. Pour the hot heavy cream over the chocolate chips and stir until the chips are melted.


Pour the melted chocolate chips over the surface of the pie, spread it on an even layer, and decorate the pie with fresh red berries, or any kind of berries that you like!
