Oatmeal and Blueberry Pancakes



Here you have a really easy and quick idea for a healthy breakfast for any day of the week! I hope you like it!

Makes 6 large Pancakes
Ingredients:
  • 1 ½ cups old fashioned oats
  • ¾ cups Milk
  • 1 Large Egg
  • ½ cup Blueberries
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½  tsp baking soda
  • 2 tbsp butter


In the blender place the old fashioned oats, the milk, the egg, also add in the sugar, the salt, the baking powder and the baking soda, blend until you get a thin batter.  To the batter add in the blueberries, stir, and set aside for a minute.

Preheat a skillet or griddle on medium low heat. Once the skillet is hot, brush it with a bit of butter, then add some of the batter to make the pancakes.  

Cook the pancake for about 2 minutes or until the surface is filled with bubbles, then flip it round and continue to cook the pancake for another 1:30 minutes or until well cooked. Keep on repeating these steps until you have cooked all the batter.

Drizzle the pancakes with honey, and top them with your favorite fruit!
