Here you have a super easy and delicious potato
salad to go along your favorite meals this supper! Enjoy
Ingredients:
- 2 lbs small potatoes
- 4 green onions
- 3 roma tomatoes
- 2 ears of corn (cooked)
- ½ cup chopped Cilantro
- 2 minced garlic cloves
- 1 tbsp white vinegar
- 2 tbsp Extra Virgin olive oil
- 6 bacon Slices
- +Salt (to taste)
- +Black Pepper (to taste)
- +Crushed Red Pepper (to taste)
Cut the potatoes in half or in bite size pieces.
Season the potatoes with a bit of olive oil, salt, pepper and crushed red
pepper to taste, toss together, and place them in a baking dish to bake at
450ºF for about 15-20 minutes or until golden brown and tender.
Cook the bacon on medium heat, until brown and
crisp on all sides. Set a side.
To make the dressing: Combine the olive oil with
the vinegar and the minced garlic, then season it with salt, pepper and crushed
red pepper to taste, stir well, and place it in the microwave for 30 seconds so
the garlic will start releasing its flavor.
Cut the green onions. You will mince one
tablespoon of the green onions. And then cut the rest of the green onions
into larger pieces, about one inch long pieces.
Place the larger pieces of onion in a large bowl, and add the minced
onion into the oil mixture. Set aside.
Cut the tomatoes in half, and remove the seeds
from the tomatoes, then cut the tomatoes in chunks. Place them in the
same bowl with the onion pieces.
Remove the kernels from the corn cobb. Place
them in the same bowl with the rest of the onions and tomatoes. Set aside.
Cut the bacon into bite size pieces.
Once potatoes are cooked, now place them in the
same bowl with the rest of the ingredients. Toss everything together, then add
in the chopped cilantro, and season the salad with the dress, give it another
toss, then add in the bacon, toss once again, and taste the flavor add
more salt and pepper if needed.
Once the pasta is ready, now you can serve it!
