Ingredients:
18 -20 shrimp (cooked and peeled)18-20 Spring roll wrappers1 cup Small Lettuce Leaves⅔ cup bean sprouts1 cup rice sticks noodles⅔ cup Shredded Cabbage⅔ cup Carrots cut in Juliana½ cup Chopped cilantro½ tsp Chili OilSalt (to taste)Black Pepper (to taste)
To serve:
- Peanut Sauce
- Soy Sauce
Cook the noodles according to the instructions
on the package. (they usually cook in about three minutes.) Once they are
done, drain them and rinse them with
cold water. Set them aside to drain well and cool down.
Peel and clean the shrimp. Cook the shrimp in
salted boiling water for about three minutes or until cooked. Once the
shrimp is cooked, now cut each shrimp in half lengthwise, and then season them
with salt, black pepper and a drizzle of chili oil, toss together so they are
all well seasoned, and set them aside.
Grab a spring roll wrapper and soak it with
water for 20 seconds, then place the wrapper in a cleaned, damped kitchen
towel, and start adding the filling right on the center of the wrapper,
feel free to add the ingredients in any order that you prefer, and you can add
as much of each ingredient as you like. So add some of the shrimp right on the
center, and just keep on adding the rest of the ingredientes, lettuce, noodles,
shredded cabbage, juliana carrots, bean sprouts, and cilantro. After you
add all the ingredientes, now roll the wrapper, bring one end towards the
center, then one of the sides towards the center as well, and then just finish
rolling it to make a roll. Keep on
repeating these steps until you are done..
Serve them with Peanut Sauce or Soy sauce.
