Hi everyone! Today's recipe is another Mexican dish! I hope you like it!
Serves 4
Ingredients:
- 1 lb Ground Meat ( I used turkey, feel free to use any meat you prefer)
- ½ cup chopped Onion
- ¼ cup chopped Cilantro
- 2 tablespoons dry breadcrumbs (Panko) (optional)
- 1 lb Tomatillos (Green Tomatoes)
- 5-10 Jalapeño Peppers
- small piece of Onion (2-3 tablespoons)
- 1 Garlic Clove
- 1-2 tablespoons Chicken Flavor bouillon
- Salt and Black Pepper to taste
- ½ tablespoon vegetable or olive oil
- 2½ cups water
- 1 large Potato cut in chunks
Peel off the tomatillos and remove the stems from the Jalapeño peppers, rinse them well and cover them with enough water. Cook on high heat for about 10 minutes or until soft. Place in a blender, add 1 cup of water, a small piece of onion, 1 garlic clove and ½ tablespoon of chicken flavor bouillon seasoning. Blend on high for about 2 minutes or until well blended and smooth.
In a large saucepan heat up ½ tablespoon of oil, add in the green salsa and cook on high heat for about 10 minutes or until it boils.
In a large bowl, combine ground meat, chopped cilantro and chopped onion, season with 1 tablespoon of chicken flavor bouillon and black pepper to taste. Mix well and if the meat mixture feels too wet add 2 tablespoons of Panko breadcrumbs, make the meatballs any size you prefer.
Add the meatballs to the jalapeño sauce, and cook on medium heat for about 20 minutes. Taste the flavor, add more salt and pepper if necessary, also add in the potato chunks and cook for another 10 more minutes or until potatoes are completely cooked. As soon as the potatoes are done, serve.
