Deep Fried Southern Chicken

Hi Everyone! Today I will be sharing with you  an amazing recipe from 101Cookingeasy, David was kind enough to let me share his recipe on my Youtube Channel.  I love his recipe, seriously, this is one of the best Fried chicken recipes I have tried in a long time! I made a few changes to his original recipe but if  you want to watch his original recipe, please visit his 101CookingEasy Channel!

Ingredients:
  •  3-3½ lbs chicken pieces  (skin and bone in or skinless and boneless, whatever you prefer is fine)
  •  7-8 cups Vegetable oil for frying (or Cooking Spray for baking! Yes it also makes great baked chicken!)

For the marinade:
  • 2 cups Buttermilk
  • 1 tablespoon Ground Black Pepper
  • 2 tablespoons Kosher Salt
  • Pinch crushed Red Pepper (optional)

For Diping:
  • 3-4 large Eggs
  • ¼ Cup your Favorite BBQ sauce
  • Dash of your Favorite Hot Sauce  (I used Sriracha, Tabasco is also great!)

For Coating:
  • 2½ cups All Purpose Flour
  • 1½ cup Panko Breadcrumbs (optional)
  • 1 Tablespoon Kosher Salt
  • 1 Tablespoon Chicken Flavor Bouillon Seasoning
  • ½ Tablespoon Ground Black Pepper
  • 1 teaspoon Ground Sage
  • 1 teaspoon granulated garlic
    1 teaspoon dry cilantro
    1 teaspoon paprika
  • ½ teaspoon Ground Thyme
    1 teaspoon cayenne pepper
    Pinch Crushed Red Pepper

Rinse the chicken pieces with cold water. Pat them dry with paper towels and place them in a large container.







Combine 2 cups of buttermilk with 1 tablespoon ground black pepper, 2 tablespoons of kosher salt and a pinch of crushed red pepper. Mix well and pour this mixture over the chicken pieces. Cover and Marinate in the refrigerator for at least 2 hours.



Combine the "coating" ingredients. Mix well and set aside until  you are ready to use this mixture.


After 2 hours. drain the chicken from the marinade.


In a a large bowl mix the eggs with ¼ cup BBQ sauce and a dash of Hot Sauce. Beat together until well combined.

Coat the chicken pieces with the flour mixture, then dip them in the egg mixture, and transfer them back to the flour mixture to coat them a second time with the flour. (1.-coat the pieces in flour, 2.-dip in the egg mixture, 3.-coat them again with more flour!) Set them aside for 15 minutes so they can absorb the seasoned flour.

Preheat 7-8 cups of Vegetable oil to a temperature of 350ºF  
(Or preheat the oven to 400ºF and bake the chicken for 25-35 minutes or until well cooked.)

Once the oil reaches the right temperature (350ºF), cook the chicken pieces 3-4 pieces at a time and fry the chicken until cooked.

Chicken legs, chicken thighs and wings with skin and bone in will cook in about 12-15 minutes.
Chicken Breast with skin and bone in, will cook in about 10-12 minutes.
Skinless and Boneless chicken pieces will cook in half the time 5-7 minutes. 

Continue to fry the chicken pieces until all cooked. Serve with mashed potatoes, and enjoy!!
